Rainbow Cupcakes

Spring is in the air ! And what better way to welcome it than with these cute RAINBOW cupcakes!! They're so super easy and super delicious!

For the cake you'll need:

1 box white cake mix - I used Duncan Hines moist deluxe-

2 eggs

1 C. of plain non-fat yogurt

1/2 C. Milk

1/3 C. veggie oil

1 tsp. Vanilla extract

Red blue yellow and green food gels or dyes

And for the Buttercream frosting you'll need:

3 C. of powdered sugar

1 C. ( 2 sticks ) of unsalted butter

1 tsp of vanilla extract

1/2 tsp. of milk

Directions:

  • Combine cake mix, eggs, yogurt, milk, oil and vanilla in a large bowl until all ingredients are incorporated.
  • Divide batter in five different bowls and dye each one a different color. Red, Orange , Yellow etc.
  • Layer into lined cupcake pans starting with red - I used a little less than a tsp for each color . Bake at 350 for 18-22 mins.
For the icing:

Cream butter and slowly add powdered sugar, beat for about 3-4 min after all the sugar has been added until slightly fluffy. Then mix in milk and vanilla.

Frost the cupcakes whenever they cool completely .

You could also dye the cupcakes your school or team colors!!
